Blogmas Day 5: What’s Your Favorite Holiday Dessert?

Now that it’s the holiday season, all of the baking pans are coming out and people are allowing themselves to indulge in their favorite holiday desserts.

Meatless Monday: Breakfast Taco 🌮

Hey my friends!Who doesn’t love a great taco? And who says we can’t eat tacos for breakfast? I have this simple breakfast taco recipe that I’m sure you will love…Here’s all you need:

  • Soft taco shells
  • Vegan spicy breakfast sausage
  • Baby spinach
  • Tofu crumbles (or liquid egg whites for those not vegan)
  • Almond butter
  • Taco seasoning
  • Vegan shredded cheese
  • Jalepeno slices
  • Salsa

You want to heat the pan with a bit of almond butter. Next chop the spinach, jalepeno and sausage into small pieces. Once butter is melted, add the spinach, jalepeno and sausage into the pan. Once spinach begins to wilt, add the tofu crumbles (or egg white) and about a half of teaspoon of taco seasoning to the mixture. Cook the mixture as you would scrambled eggs, making sure to evenly distribute the seasoning.

Once cooked, you assemble as you would any taco you eat. I like to add vegan shredded cheese, jalepeno slices and salsa (just the sauce… I despise onions, tomato pieces and pepper…don’t judge lol).

This is just a way to give yourself a break from the normal type of breakfast meals we eat. I hope you enjoy it.As always, until next time…stay healthy and stay safe 💋

Meatless Mondays: Spicy Breakfast Bowl featuring Gardein 🍲

Hey my friends!

So I’ve teamed up with Gardein to share with you this amazing breakfast bowl I created using Gardein’s spicy breakfast sausage patties. This is by far one of my most favorite breakfast meals I’ve been making for months …of course when I’m not doing the intermittent fasting!

It is quite a simple, yet tasty recipe and here are the ingredients you need for 1 serving:

  • 1 Gardein spicy breakfast sausage patty
  • 1 1/2 cups of baby spinach
  • 1 cup firm tofu ( 12 tbsp of egg white if not vegan)
  • Olive oil butter
  • Jalepeno
First thing you want to do is heat frying pan with a dab of olive oil butter.  Once heated, add the sausage patty into the frying pan. Chop the baby spinach and jalepeno into small pieces and set to the side.  You also want to cut the tofu into small pieces, as the goal is to make it look like scrambled eggs whites.

Before the sausage is fully heated, chop the patty into small pieces and add the chopped spinach and jalepeno into the frying pan.  Once the spinach gets wilted, add the tofu and stir all the ingredients together (for those who prefer to use egg whites, add 12 tbsp of egg white liquid).  You don’t need to add any seasoning to this dish, as the Gardein sausage patty is already spicy and well seasoned.  Once completed stirred, pour into the bowl and enjoy.
