Happy 2020 my friends!
I bring to you my first vegan recipe of the year after taking a much needed break after blogmas…
I used to purchase this vegan ricotta called Tofutti and for some reason my local supermarket stopped selling it. It’s been 2 years since I’ve seen that ricotta. So the other day I went to a newly built supermarket in a neighboring town. Low and behold what did I see…Tofutti. Needless to say, I was one happy camper. You would have thought I won the lottery. I picked up every container they had.
Stuffed ShellsInstead of making the typical lasagna dish, I wanted something not as heavy, but with the same flavor. What else is better than stuffed shells with ground beef-less sauce and here’s all you need:
- Pasta shells
- Pasta sauce
- Ground beef-less meat
- Tofutti ricotta
- Baby spinach leaves
- Extra virgin olive oil
First thing you want to do is boil the water. I like to add my seasoning abd olive oil to the water. Once it comes to a boil, add the pasta. While the pasta is cooking, you want to prepare the sauce. Add a teaspoon of olive oil to the skillet, then add the beef-less ground with 1/4 cup of water and seasoning. Add the pasta sauce to the beef-less ground and mix.
Preheat your oven to 375.
You want to chop up the spinach because you’re going to add it to your mixture.
Now it’s time to start assembling…
Add the ricotta to the pasta shella and some of the ground beef-less sauce. Once you compete that, pour the remaining sauce over the pasta.
Cover the dish with foil and put in the oven for 35 minutes.

As we reflect on 2019 and the decade in general, think about some of the highs and lows that were apart of your life.
It’s funny to think about what has happened in my life within the last decade. Now when I think about it, those ten years flew right by me. This decade has been a challenge to say the least. Some good, some bad…
And I don’t regret any of it…
I can honestly say with all of those stresses I had to face, it has developed me into the adult I know my family is proud of.
As I close the chapter to this year and this decade, I am so looking forward to starting chapter 2020. And in that chapter, I’m picking up where I left off in chapter 2019, as it was getting so good.
I want to thank all of my subscribers and those who have read and/or commented on my posts. I truly appreciate you all. And just know, the best is yet to come…

So we are nearing the end of Christmas shopping. Have you all completed that task? If not, you have less than 3 days to do so.
There is still time to order from Amazon and receive it before Christmas, but you have to order by noon on Sunday.
Or you can purchase online from Target, Kohls, Macy’s and Old Navy and pick up in store by Tuesday. I did a lot of online shopping because I do not like a crowd. When you go to the store, you skip having to hussle and bussle through the crowds to look for your gifts. All you need to do is order, go in line and pick it up.
Another tip is to look at the store hours. At this point, many of the stores are open 24/7. So if you’re a late shopper or forgot to get something, put that coat on over your pajamas and head out.
