Vegan Monday…Takeout Anyone??? πŸ˜‹

Hey my friends!

So who doesn’t love to indulge in chinese takeout every once in awhile? I know many of you enjoy eating fried rice, whether chicken or shrimp. I unfortunately never had fried rice because I despise eating rice. Yes I said it… I despise rice πŸ˜–.

My brother’s favorite chinese takeout dish is chicken fried rice. With that in mind, I decided to make a vegan version that is also healthy and more importantly, something that I could actually eat.

So my version of chicken fried rice is the chik’n fried couscous.

Welcome May 😘

New Phototastic Collagemay

Hey my friends!

Happy May…I have to tell you that I have been happy, yet nervous for the month of May to arrive. I am looking forward to a fresh start to a healthier life, but with that you have to go through some physical pain.

For the past few months I have been getting my body healthier and just building up my immune system in preparation for a necessary surgical procedure. Today is Autism Awareness Day…

Hey my friends!

Those of you that have been following me for awhile know how much this cause means to me.

I encourage all of you to read about autism and truly understand:

  1. What is autism?
  2. What are the signs of autism?
  3. How does autism affect not only that person, but that person’s family?
  4. What can I do to help that person with autism?

I am not at all an expert in this field, but I do have experience growing up with someone I love dearly that has a mild form of autism. If you have any questions that I can assist with, please leave me a comment and I will help in any way I can.

Until next time…night night πŸ’‹
