Meatless Monday: Memorial Day BBQ Edition

Hey my friends!

Happy Memorial day to you…So those of you that don’t eat meat, it can sometimes get difficult to find something to eat when you go to a BBQ.

You usually find yourself eating salad and fruit. Well I’m here to show you 4 simple foods you can eat.

Classic Cheeseburger 🍔

You can have your plant-based burger with vegan cheese (my favorite is the violife cheddar). Add your favorite condiments and enjoy. Believe me it taste just like the beef burgers everyone else is eating.

Hot dog 🌭

You can grill your plant-based hot dog, add your favorite condiments.

Grilled corn on the cob🌽

Instead of basting your corn with regular butter, use this plant-based butter with almond oil. And to make it more like a Mexican street style corn, add vegan parmesan cheese.

And lastly, but in my opinion necessary at any BBQ…

Potato salad

I believe a great classic potato salad must have boiled eggs in it and my mom hands down makes the best 👌🏽.

With that being said, an alternative for vegans is to add hot dog relish to your potato salad. It might sound weird at first, but it adds a delicious kick to the potato salad. I like to use red potatoes to make the salad. And I top it all off by mixing with vegan mayonnaise (the best is Hellmann’s).

So who said you can’t eat good at a BBQ? These are just a few basic and simple recipes you can use. There are so many options for a person that is either vegan, vegetarian or just trying to cut down on their meat consumption.

Meatless Monday: Breakfast Taco 🌮

Hey my friends!Who doesn’t love a great taco? And who says we can’t eat tacos for breakfast? I have this simple breakfast taco recipe that I’m sure you will love…Here’s all you need:

  • Soft taco shells
  • Vegan spicy breakfast sausage
  • Baby spinach
  • Tofu crumbles (or liquid egg whites for those not vegan)
  • Almond butter
  • Taco seasoning
  • Vegan shredded cheese
  • Jalepeno slices
  • Salsa

You want to heat the pan with a bit of almond butter. Next chop the spinach, jalepeno and sausage into small pieces. Once butter is melted, add the spinach, jalepeno and sausage into the pan. Once spinach begins to wilt, add the tofu crumbles (or egg white) and about a half of teaspoon of taco seasoning to the mixture. Cook the mixture as you would scrambled eggs, making sure to evenly distribute the seasoning.

Once cooked, you assemble as you would any taco you eat. I like to add vegan shredded cheese, jalepeno slices and salsa (just the sauce… I despise onions, tomato pieces and pepper…don’t judge lol).

This is just a way to give yourself a break from the normal type of breakfast meals we eat. I hope you enjoy it.As always, until next time…stay healthy and stay safe 💋

It’s been a Year Today…

Hey my friends!

I cannot believe it has been a year today that I had my vertical open myomectomy. I remember that day so well. I was not nervous, but anxious to get the surgery over with. I had such bad menstrual symptoms and just wanted to relieve the pain.

My surgeon gave two options of the type of pain medications I could get. I could get the morphine drip that I could push the button to dispense every 8 minutes. Or I could get an epidural, which would give continuous relief. Although I have heard negative side effects with an epidural, it was a no brainer choice for me. To be without pain for a couple days makes it all worth it.

Many people have asked me how my health is since the surgery. So I decided to do a short Q&A together of the most frequently asked questions.

How long did it take to completely heal after a vertical open myomectomy?

It took about 5 months to feel completely healed. My energy returned to 100% and I was able to go back to a normal exercise routine.

Was the surgery successful?

I would say the surgery was 80% successful. Because I still want to have a baby and therefore keep my uterus, the surgeon couldn’t remove one of the fibroids. The fibroid was attached to my uterine lining and if removed would mean having to get a hysterectomy.

Although all of the fibroids couldn’t be removed, those that were causing major issues were.

Do you regret having the surgery?

I don’t regret having the surgery, as it was necessary. I was losing too much blood and my iron was basically undetectable in my body. The only regret I have is not having the surgery sooner. The fibroids would not have grown as large as they did, which could have avoided my having to get a vertical scar.

How do you feel a year later?

I feel good overall. My hemoglobin levels have been back to normal. However, my iron is still too low.

I recently had my ultrasound done to check on my uterus. The fibroid is still there of course, but hasn’t grown. There are two extremely small fibroids lurking around my uterus. They could have already been there, but were undetectable. And lastly, my endometriosis is still causing some issues.

Although I do feel a difference with my scar, it’s still very much visible. I can now start using a fading cream. I’m crossing my fingers and toes that the cream will work.
